The next recipe in my Sensational Summer series is a recipe I found our last summer in Hawaii. Each time I make it, it brings me back to the sometimes-sweet-always-crazy days of a newborn + toddler + preschooler. Those were some hard days that, thankfully, I can now look back on & smile. Matthew loved being in a sling, so dinnertime was easier than it had been with the other two.
Sometimes I make these Honey Chicken Kabobs as kabobs, other times I use the marinade & grill the chicken breasts whole. Add some fresh ginger and hot chili paste to the marinade and this makes a great stir-fry sauce.
Honey Chicken Kabobs
Makes 8-12 Kabobs
1/2 cup vegetable oil
2/3 cup honey
2/3 cup soy sauce
1/2 teaspoon ground black pepper
4-5 cloves garlic
8 skinless, boneless chicken breast halves – cut into 1 inch cubes
Onions, bell peppers or other favorite vegetables
Combine oil, honey, soy sauce, black pepper & garlic to a large bowl or ziptop bag, reserving 1/3-1/2 cup for basting. Add cubed chicken, toss & marinate at least two hours.
To your soaked skewers, add your chicken & vegetables. Over high heat, grill 12-15 minutes, rotating your kabobs 2-3 times. Baste with reserved marinade each time you turn them.
