The new year always makes me want to clean out my house. New Year, spring time and the winter holidays. I’m not great at follow-through but desire has to count for something, eh?! But as I mentioned a couple weeks ago, I decided to do a pantry & freezer challenge this month–and I’m following through! I didn’t do the whole only-eat-from-it-buy-only-perishables thing (more power to those who do it & do it well!) but I did want to be mindful about using up items.
Two weeks in & I’d say I’m doing well! 15 of the 29 items have been used in total/are on the upcoming menu and 3 items have been used in part.
1 loaf pumpkin bread (1 breakfast + 1 snack)
Pizza dough x 2
Sugar snap peas (2 meals)
1 bag Sun Chips
1 jar hoison sauce**
1 can black beans**
On to my menu plan….this week will be a busy one for us with four evenings of activities (never happens!). I usually plan one week at a time but I started plugging in meals for my pantry challenge, found myself nearly finished, so I decided to finish it up.
Homemade pizza x 2
Chicken enchiladas (half green sauce, half red sauce) + Mexican rice + shredded sweet potatoes + fruit
Spaghetti & meatballs + garlic bread + lasagna soup + salad
Kung Pao chicken + fried rice + fruit
Chile lime chicken kabobs + barley pilaf + salad
BBQ-rubbed grilled chicken sandwiches + oven fries + salad + fruit
Beef tips & noodles (adapted to the crockpot) + icebox rolls + green beans + fruit
Carnitas + sweet corn cakes + fruit + ???
Blackened chicken + homemade rice-a-roni + salad
Italian grilled chicken + pasta & red sauce + garlic bread + salad
