We started school last Wednesday and got a few good days under our belt. They were a bit bumpy as we iron out the schedule but we’ll get there. I’m looking forward to our first full week this week.
With the school year starting up and fall activities beginning, my menu plan has to change gears a bit. I need low-prep meals, crock-pot meals, out of the freezer, on-the-go meals and/or make ahead meals. Cooking at the end of a long day is a bit of therapy for me, so this shift will be hard. The kids’ sports will have us out of the house every evening Monday-Thursday + Awana on Sunday evenings. Thankfully, it’s just 12 weeks of the sports. New schedule begins today and I have a feeling I may have overestimated what I’m able to accomplish for dinners–we’ll see!
We keep lunch very simple. Sandwiches & leftovers are always available. Frozen foods (taquitos, popcorn chicken) I make once a week. And then I cook once or twice a week. Sides are pretzels/crackers/chips + yogurt + fresh fruit/veggies.
Mexican meatballs (frozen Costco meatballs + tomato sauce + seasonings)
Korean beef + brown rice
Slow-Cooker BBQ Chicken Sliders (new recipe, double it to freeze), grilled potatoes, melon & blueberries, salad
Latin pork kebabs (double it to freeze), arroz verde de poblano, pineapple, salad
Garlic chicken, pasta + red sauce, salad, berries
Sweet & Savory grilled chicken salads, berry muffins
Chipotle chicken fajitas, leftover arroz verde, pineapple
Crockpot pulled pork (makes five meals worth, will freeze), make-ahead smashed potatoes, green beans, fruit
Lime chicken tacos, rice, pineapple
Chicken carbonara deluxe (new recipe), crusty bread, fruit, salad
Mongolian beef (extra batch of the sauce to freeze), rice, sugar snap peas, fruit
Ham steaks on the grill, corn on the cob, baked potatoes/sweet potato hashbrowns (for those who don’t like baked potatoes), sweet dinner rolls
Peruvian-style roast chicken + vegetables, fruit, salad, beer bread (x2–will freeze the second for another night)
BBQ chicken (bone-in breasts + legs), hush puppies, green beans, salad, fruit
Skirt steak, rosemary garlic roasted red potatoes, garlic bread, fruit, salad
