We are looking ahead to our move coming up in less than two months. We will be first-time home owners in just ONE month! It is long overdue for us and we are excited to have a home we can call our own. This week will be the last week until our move that is a normal week for us. I’m sad to have our next-move countdown beginning….but looking forward to what our next duty station will bring us.
Since is the last real week for us, I decided to put a little more effort into our meals. Usually by this time of the year, I’m making the switch to our summer menu style. This will also give me a chance to empty out more of our freezer! Since we are doing this move in stages and since it is a local one (when your moves have all been cross-country moves, 4 hours feels local!), we will be taking a lot of freezer & refrigerator items with us.
Monday–Blackened chicken, homemade rice-a-roni, salad, fruit
Tuesday–Garlic parmesan, pasta with red sauce, Italian salad, fruit
Wednesday–Pork enchiladas, arroz verde de poblano, sweet corn cake, pineapple
Thursday–Jim is on his own with the boys. He’ll make some kind of chicken legs.
Friday–5-ingredient chicken bacon ranch kabobs, salad, fruit, baked potatoes
Saturday–Birthday dinner! Steak, fruit, corn, garlic bread or beer bread are his requests, I’ll also add salad & green beans.
