I have planned the meals for the rest of the month. I’ve left a few empty nights and I bought some meat that doesn’t have a plan, so we’ll be flexible with those nights. All the nights, actually, are flexible. The only set-in-stone meals are Christmas Eve, Christmas Day & New Year’s Eve.
I didn’t plan anything specific. I have a variety of freezer foods on hand + leftovers. And there’s always sandwiches.
Sticky Rotisserie-style chicken, garlic green beans, salad & fruit
Chipotle-marinated chicken, sweet potato hash browns, roasted bell peppers/onions/potatoes
Breaded chicken cutlets, oven brown rice, lasagna soup, fruit
Chili + cornbread (Christmas Eve tradition)
Beef tips & noodles, corn, icebox butterhorns (Christmas dinner)
Sliders, blooming onion petals, oven fries
Brown sugar & garlic baked chicken, sugar snap peas, homemade rice-a-roni
Beef enchiladas, mexican rice, sweet corn cakes, refried beans
Orange beef & General Tsao’s chicken, fried rice + white rice
Grilled ham steaks, baked potatoes, Hawaiian rolls, salad
